Bread And Butter Pickles

7-8 cucumbers, sliced thin
1-2 onions, sliced thin
1 red or green pepper, optional

Sprinkle with 1 T salt. Marinate weighted for at least 1 hour.

Bring to a boil and cook until sugar is completely melted

2 C sugar
1 C white vinegar
1 t celery seed

Drain off liquid from cucumbers - drain well - I use a colander and really press hard on them
Pack very tightly in jars that have been washed well in hot water - I run them through the dishwasher

Pour hot liquid over cucumbers. Seal lids tightly and refrigerate when cool. I like to turn the jars upside down and then upright again as they cool as it distributes the brine better.

Must be refrigerated as they are not "canned." Really good after 2-3 days and they keep indefinitely - IF you can keep them that long.
